ingredients:
- 1 1/4 cups all purpose flour
- 1 cup yellow corn meal
- 2/3 cup granulated sugar
- 1 teaspoon salt
- 1 tablespoon baking powder
- 1 1/4 cup unsweetened almond milk
- 1/3 cup canola oil
instructions:
- Oven at 210C
- Mix vinegar and almond milk, let sit for 10 mins
- Mix cornmeal, flour, sugar, baking powder, salt
- Add vinegar+almond milk, oil, and eggs to dry ingredients
- Stir and pour into muffin tin
- Bake for 20 mins
